Brent’s Savory Paleo Chicken Soboro Don
Ingredients
1-1 ½ lbs ground chicken
2 cups egg substitute
2 ½ tbsp coconut aminos
4 tbsp water
1 tbsp avocado oil
1 bunch green onions (separate green and white parts and slice thin)
1 tbsp sriracha
2 tbsp minced garlic
1 bag Sam’s Club riced cauliflower (cooked in the microwave)
Salt and pepper to taste
Directions
In a large, heavy skillet, add water, coconut aminos, sriracha, garlic, and white part of onion and stir to combine.
Add the ground chicken and fold it into the liquid. Let it sit for about 10 minutes.
Cook the ground chicken over medium heat breaking it up into small pieces. The mixture will release liquid as it cooks. Once the chicken is near done, add the avocado oil, stir to combine, and increase the heat to high until most of the liquid has cooked off (sort of like a stir fry). Add to a large bowl when cooked.
In a separate skillet, season the egg substitute to taste and cook over medium/medium-low heat. Stir constantly to break the egg substitute into small pieces as best as you can. Chopsticks are effective. Add to the same large bowl when cooked.
Add the cooked riced cauliflower and green onion to the same large bowl and mix all of the components together.

Note. If you would like a more traditional presentation, you can use the cauliflower rice as a base and add each of the ground chicken, eggs, and green onions in in separate “lanes” on top.
