Brent's Paleo Jambalaya

Easy Paleo Jambalaya

Ingredients:

1   large yellow onion (diced)

1   green bell pepper (diced)

1   10 ounce can of Rotel tomatoes and green chiles

1 tbsp avocado oil

2 tbsp   lemon juice

1 tbsp   minced garlic

2 packages   Sam’s Club riced cauliflower

1 lb   frozen cooked salad shrimp

½   Kroger turkey sausage (sliced thin in quarters)

2   grilled chicken breasts (sliced thin)

Seasoning:

4 tsp   paprika

2 ½ tsp   sea salt

1 tsp   onion powder

1 tsp   garlic powder

1 tsp   ground thyme

½ tsp basil

½ tsp black pepper

½ tsp cayenne


Directions

  1. Heat avocado in a large skillet over medium/medium-high heat.

  2. Add onions, bell pepper, garlic, and Rotel and cook until softened (around 10 minutes).

  3. Add protein, cauliflower rice, lemon juice and seasoning.

  4. Stir to combine and cook for an additional 5 minutes.
