Cravings Buster: Two-minute Protein Pancake for the Win!

When you make a two-minute version of a protein pancake and the next thing you know you have adorable 2-year-old & 1-year-old trolls hovering over your food and munching away... you know you're onto a winner.

So here is a protein pancake recipe that literally takes 2 minutes to make and, according to my toddlers, is "yummy yummy for my tummy."

Ingredients

½ scoop vanilla protein powder

1 egg

6 egg whites (I just used 1 cup of egg beaters to cut down on prep time)

1 stevia packet

1 pinch baking powder

1 pinch pumpkin pie spice

1 pinch almond flour or meal

1 pinch coconut flour or meal

Heat a pan, spray with pam or use butter. Blend ingredients in blender, pour & cook. (You could also throw a couple blueberries into the batter while it's cooking). Top with butter or Smart Balance Light and sugar-free maple syrup (you can also mash raspberries with some boiling water if you don’t like the chemicals in the sugar-free maple syrup)
