A Very Minnie Mouse Birthday Cake

We made this on my Ezme's third birthday a couple weeks ago, and it was delicious. Mom had two slices, didn't workout that day, and actually lost 2 lbs the next morning. With minimal effect on blood sugar it's a great option for special occasions; Minnie Mouse ears optional.

 

Magically Moist Almond Cake

¾ cup unsalted Butter

1 cup of Coconut Sugar

4 Eggs

½ cup Whole Milk

1 tsp Vanilla

1 ½ cups Bob’s Red Mill Almond Meal/Flour

½ cup Organic Coconut Flour

¼ tsp Salt

2 tsp Baking Powder

 

Preheat oven to 350 degrees F. Grease a 9x13-inch cake pan.

Cream together the butter and sugar until smooth. Add in eggs, one

at a time, and beat until fully blended. Add milk and vanilla; mix

until combined. In a separate bowl, combine flours, salt and baking

powder. Stir dry ingredients into wet ingredients. Beat until

creamy. Spread batter in prepared pan and back for 30 minutes.

Serve with fresh fruit and/or whipped cream.

 

Whipped Cream Frosting

1 cup of Heavy Cream

1 scoop Chocolate Quest Protein Powder

(Note: Can use any flavor of the Quest protein powder that you

prefer. Optionally can add 1 tsp vanilla or 1 tablespoon of coconut

sugar to sweeten.)

 

Beat the cream and protein powder together until very stiff. Should

have the consistency of a thick mousse. Use to frost the almond

cake or serve as a mousse with berries.
