Ingredients:
1 ½ pounds Mild Italian Sausage (or ground turkey or turkey sausage)
Pasta Sauce (Use your favorite jar sauce or make your own)
Zucchini
1 medium Sweet Yellow Onion
2 Green, Red or Yellow Peppers
8 ounces Mushrooms
2 ounces Shredded mozzarella cheese or parmesan cheese (optional)
Cook the sausage then add the pasta sauce to the sausage and simmer.
Saute the onion, peppers and mushrooms together with seasonings of your choice (i.e. garlic, basil, oregano or some pesto sauce).
Slice the zucchini into rounds.
To assemble the lasagna spread a bit of the meat sauce on the bottom of a 13x9 pan, add layer of zucchini slices, next spread the sautéed vegetables over the zucchini slices, spread more of the meat sauce over the vegetables, layer more zucchini slices over the vegetables, spread the remaining sauce over the zucchini. Finish by sprinkling cheese over the top of the sauce if you choose to use cheese.
Cover with foil and bake in a pre-heated 350 degree oven for 30 – 45 minutes. Once the cheese is melted and the sauce is bubbling remove from the oven and let it sit for 10 – 15 mins before cutting and serving.
Use this recipe as a base. You can add any vegetables of your choice such as spinach, eggplant, or broccoli rabe. You can also modify your favorite lasagna recipe by simply using zucchini slices instead of lasagna noodles, adding more veggies and omitting the ricotta cheese. Enjoy!
